Food Truck Aims to Boost District High School Lunch Participation

Boulder Valley (CO) School District is rotating its own food truck to each of its five district high schools one day a week in order to provide students with an alternative to the cafeteria fare and raise the 20% high school lunch participation rate, reports the Daily Camera. The truck, purchased with a $75,000 donation from Whole Foods, dishes up such selections as made-to-order chicken pesto sandwiches, BBQ pork sliders, pesto and provolone grilled cheese sandwiches and burgers, all available as parts of reimbursable meals. The mobile eatery, which also makes a stop at the district administrative offices three days a week to serve staff there, takes cash and credit cards payment as well as school lunch account and federal reimbursement for students qualifying for free/reduced-price meals.
