For a while now, FM has followed the rural adventures of South Carolina’s Spartanburg School District 6 Organic Farm & Nutrition Services, where Director Ron Jones and Chef Andrew Evans go from seed to school lunch with an organic farm that helps set the menus and bring seasonality into the students’ lives.
We talk about nurturing the farm and storing the harvest for winter. As school foodservice professionals with farming at their doorstep, they straddle the lines between nature’s calendar and the school calendar. Tomatoes are quickly turned into pizza sauce. They’re putting up veggies for the winter months already. We also find out about a new partnership with a grassfed cattle ranch that has led to some amazing grassfed tacos and other cool new menu items. And at the heart of it all, students here are getting a taste of real food in its original form, like little candy-colored bell peppers. Even if they dip those veggies in ranch!
