Denver Schools Working With J&W Interns

Culinary students from Johnson & Wales University are working with Denver Public Schools Nutrition Services Department on recipes that use the scratch cooking approach the district plans to pilot next fall, reports the Denver Times. Four J&W interns are working on the recipe project while four others are helping to develop a nutrition education curriculum for the school system.

To prepare for the conversion, the DPS Nutrition Services Dept. will be holding scratch cooking classes for about a hundred of its employees over the summer. The district plans to introduce scratch cooking at 25 to 30 of its school sites in September. The training will include topics such as ordering fresh food, food safety, presentation and garnishing as well as basic food prep techniques.
