Steven Burke, foodservice chef at the Austin Independent School District, has revamped more than 125 recipes in an attempt to make his district's menu healthier. One of the district's mainstays was a Glazed Apples recipe. To make it healthier, Burke replaced the butter with a no-fat butter substitute and decreased the sugar by 63%.

Ingredients

2 #10 cans sliced apples
1 cup sugar
1/4 cup butter buds, reconstituted
1 tbsp. cinnamon
2 tsp. lemon juice

Steps

1. Pour contens of 2 #10 cans of apples per 2 1/2-in. steam table pans.

2. Add sugar, lemon juice, butter buds and cinnamon. Stir well.

3. Bake at 325°F for approximately 45 to 50 mins. Stir once during cooking process.

4. Portion with #8 scoop for 1/2 cup serving. Note: Make a day ahead of serving if possible to allow flavors to absorb into the apples.
