Can Eggplant Be a School Food Hit?

Eggplant parmesan was a surprise hit at a taste testing of potential school lunch menu items for elementary school students conducted recently by researchers at the Rutgers Food Innovation Center, reports the Press of Atlantic City. The Center is looking for kid-friendly dishes that can incorporate fresh local produce items. The key to the eggplant parmesan seemed to be its round shape and cheese topping, which made some of the children eating it think it was actually a small pizza.
