Wondering how to utilize cranberries in a school meal? Here’s a hint: There are many more possibilities than cranberry sauce! For example, the inventive Cranberry, Kale and Quinoa Stuffed Poblano and Duck Tacos by Danny Avenel, chef manager, and Sam Dudley, head cook at Porter-Gaud School in Charleston, S.C., that took the $2,000 grand prize in Cranberry Marketing Committee USA/Flik Independent School Dining’s Cranberry Recipe Contest.

“This contest celebrates the talent and creativity of school foodservice professionals, as well as their efforts to provide students with great-tasting, nutritious meals year-round,” says Scott J. Soares, executive director of the Cranberry Marketing Committee USA.
