Healthcare foodservice in 2023 faced issues ranging from menuing healthier meals for both patients and retail customers, to using technology to expand services—especially to traditionally off hours—and make more efficient use of increasingly expensive and scarce labor.

These challenges seemed to have brought about a burst of creativity and innovation in the healthcare dining market symbolized by a healthcare operator winning the Best of Show award in the 2023 FM Best Concept Awards competition.
