Penn State University has converted one of its campus dining halls into an all-healthy-all-the-time venue. While the other five dining halls retain their traditional menu mixes, Simmons is designed to serve students who wish to eat a healthier diet without being tempted by less healthy choices. Selections include six daily soups, lean meats, low fat cheeses, vegan and vegetarian entrees and lighter desserts.
