Erie County Medical Center in Buffalo, N.Y., has transformed its salad bar into a fall pop-up market for hospital staff and guests. 

The market offers a variety of items to celebrate the season, including locally grown fall fruits and vegetables, apple cider, juices and freshly prepared snacks made by the Metz Culinary Management dining team. 

This pop-up is just one of the ways hospital foodservice operators are repurposing their salad bars in light of COVID-19 safety concerns.
