In-house dining operations at UM Medical Center are split between the self-operated patient side and the contracted retail side, where Aramark operates seven outlets, including branded Subway, Starbucks and Einstein Bros. Bagels units, and local operator Picasso Restaurant Group, which operates three individually branded cafe locations.
Patient dining operates from two room service production kitchens, one to serve the main University Hospital, the other the four-year-old C.S. Mott Children’s and Von Voigtlander Women’s Hospitals.

Room service in University Hospital is offered round the clock, though the menu is limited in the off hours. The menus, which include standard selections as well as chef specials, are reviewed every four months and updated as needed. The Women’s/Children’s Hospital patient dining kitchen includes a manager’s office with three-sided views of production operations for more efficient oversight, and a sophisticated milk room operation for 24/7 preparation, distribution and availability of specialized infant formulas and breast milk. All rooms in the Women’s/Children’s Hospitals also have refrigerators.

The main hospital converted to full room service from a cook-chill model, with no increase in FTEs, at the beginning of 2013 following an extended renovation that saw production operations moved temporarily to a leased facility two miles away.
