FAIRBANKS, Ark.—Fairbanks Memorial Hospital remodeled its cafe last year, making healthy changes that help cafe patrons and the community.

Last summer, the hospital cafe started sending its leftover food, every day, to community organizations that could put it to good use.

“It is things that are not served yet, but that we couldn’t re-use,” said Jane Walsh, senior manager of culinary at the hospital. “And it has grown from that.”
