UC-Riverside Opens All-Healthy Campus C-Store

Everything in the new Scotty's falls under one of five categories: organic, gluten-free, vegan, non-GMO and/or under 550 calories.

The University of California at Riverside has opened a fifth location of its Scotty's c-store concept near its School of Medicine, but unlike the other four, this one focuses exclusively on healthier options, reports the school's Highlander campus paper. The product mix includes fresh fruit, yogurt, specialty drinks like orange juices and organic milk, unique items like kale chips and tofu sushi rolls and an exclusively created line of 500-calorie sandwiches. Everything in the store falls under one of five categories: organic, gluten-free, vegan, non-GMO and/or under 550 calories. The new Scotty’s is also set up as an open area, which gives it more of an outdoor market ambience than of a regular convenience store.
