UConn adds gourmet food trucks

One truck serves ice cream, while the other offers a variety of tacos influenced by world cuisines.

The University of Connecticut has added two gourmet food trucks to its campus, reports The Hartford Courant.

The Blue Cow food truck serves ice cream in cups, cones and sundaes. Officials say its menu was easy to define; while the process was somewhat tougher for the Food For Thought truck, which serves up a variety of tacos influenced by world cuisines.

As FoodService Director recently reported, UConn’s Food for Thought truck also serves crickets as a taco garnish, touting the insects as organic, not genetically modified and earth friendly.

"When we started talking about the menu, it was important to not have it be traditional burgers and fries. We wanted it to be something… they couldn't get in the dining halls or anywhere else on campus," Charles Couture, UConn’s assistant director of retail operations, told the Courant.
