Metz Culinary Management introduces sushi hand-rolled on site in higher education

The rolls are a new addition to the company’s grab-and-go concept, Chef Fresh.

Metz Culinary Management has introduced sushi hand-rolled on site at some higher education locations.

The rolls are being served under Metz’s grab-and-go concept, Chef Fresh. Dining teams use white rice sheets, fresh vegetables and sashimi, and a rolling machine to prepare the rolls.

“It is super easy. We prep 180 servings and sell out before 1:00 p.m. and usually scramble to make extra,” said Josh Christopher, general manager at King University Dining Services, in a statement. “One student said the sushi is why they purchased a commuter (dining) plan.”

The price point of the finished product is between $6.99 to $8.99, which is lower than purchasing sushi from a third-party, according to Metz.

Four colleges currently partner with Metz to offer the rolls. The foodservice management company hopes to expand to 10 or 15 college partners by this spring.
