J&W grad to lead dining at Laurel Ridge

Zachary Erickson already has plans to improve service at the 126-bed skilled nursing and rehabilitation center. Laurel Ridge Health Care Center, in Ridgefield, Conn., has hired Zachary Erickson as its new director of dining services.

Laurel Ridge Health Care Center, in Ridgefield, Conn., has hired Zachary Erickson as its new director of dining services.

According to the Ridgefield Press, Erickson is a graduate of Johnson & Wales University, in Providence, R.I. He earned an associate degree in culinary arts and a B.A. in culinary nutrition. He has worked at a number of institutions in New England, including Brown University, Trinity College and Griffin Hospital.

He told the Press that he has plans to improve the center’s point-of-service model and wants to make use of the center’s garden program to include “garden-to-plate options.”
