The University of Wyoming Union is adding a series of new dining options for students returning for the fall session. They include the already opened Rolling Mill Cafe, which features hand-crafted paninis, gourmet salads, Starbucks coffee and made-from-scratch bakery products. Rolling Mill will expand its hours during the academic year to 7 a.m.-8 p.m. and add new menu items such as hot breakfast paninis, quiche and loaves of bread along with other new products, promotions and weekly specials.

The Union’s CJ's c-store has expanded its stock of convenience items, including grab-and-go sandwiches and UW Dining Services' own branded Sushi Ouji, which is made fresh every day. CJ's will be open from 7:30 a.m.-9 p.m. weekdays during the academic year and will also offer limited weekend hours.

Two more locations are expected to be open in the Union’s food court when classes start. They are S'Pokes Pizza Company and the Snowy Range Creamery. S'Pokes sells pizza either whole or by the slice as well as breadsticks and salads while Snowy Range has Dreyer's ice cream products and handmade mix-in treats crafted on a stone slab. Additional menu items will include malts and milkshakes. S'Pokes Pizza Company will be open from 10 a.m.-7 p.m. and Snowy Range from 10 a.m.-4 p.m. Two more concepts have yet to be named but may be filled by national brand franchises.
