Illinois Prisons Sued for Too Much Soy in Meals

Nine Plaintiffs are suing the Illinois Dept. of Corrections, alleging that the it is endangering the health of inmates by serving too much soy in prison meals. The suit claims that tens of thousands of Illinois prison inmates are being fed up to 100 grams of soy protein daily, four times the amount recommended by the U.S. Food & Drug Administration, and that this especially endangers those with soy allergies and sensitivities, as well as those with gastrointestinal and thyroid problems. The plaintiffs seek an injunction that would stop the serving of soy in Illinois prisons, as well as damages.
