Holy Cross Enhances Food Allergy Efforts

College of the Holy Cross Dining Services has opened a new allergy-free kitchen and introduced a gluter-free meal equivalency program in an effort to better serve the estimated hundred or so students diagnosed with food allergies. The special kitchen, located in Kimball Dining Hall, was part of the dining hall pantry but has been renovated to stock gluten-free snacks, microwaveable convenience foods, single-use dishes and silverware and simple prep equipment like a toaster and microwave.

Students with allergies can access the space to make snacks or meals with the security of knowing that the space is allergan-free. Meanwhile, the gluten-free meal equivalency program lets students select meals from a special menu, e-mail their selections to the Kimball chefs and then pick up the food in the allergen-free kitchen. Optional take-out containers allow students to transport their meals to other venues so that they can dine with their friends anywhere on campus if they choose.
