Harvard Restaurant Wins Notable Green Certification

Sebastian’s Café at Harvard University School of Public Health has received two-star certification from the Green Restaurant Association. It is one of only four restaurants in the state of Massachusetts with a two-star or better rating.
GRA rates restaurants on seven environmental categories to determine its ratings: water efficiency, waste reduction/recycling, sustainable furnishings/building materials, sustainable food, energy, disposables and chemical/pollution reduction.
Key components of Sebastian’s sustainability record include compostable disposables, 100% recycled or unbleached papers, bio-based or recyclable takeout containers, faucet aerators, LED lighting, occupancy sensors, 29% vegetarian/vegan products, green cleaning products, pre- and post-consumer waste composting, commingled recycling, reusable mugs and trays and dual-flush toilets.
“Sustainability is a core value for Harvard university Hospitality & Dining Services,” says Executive Director Ted Mayer. “Throughout our operations, we take great pride in reducing our environmental impact—with our physical plant, the food we serve and with the way we engage our staff and customers. Sebastian’s two-star certification is a testament to their dedication and the work of our entire team.”
