A pilot project called the Western Lake Superior Food Hub has begun connecting large "anchor" foodservice providers in the Duluth, MN, region with area producers to promote local production, reports the Duluth News Tribune. Among the institutions participating in the program are St. Luke's, Essentia Health St. Mary's Medical Center and the campuses of the College of St. Scholastica and the University of Minnesota Duluth, with the Duluth Entertainment Convention Center to join up later this spring with vegetable buys.
