Florida will begin self-operation of food services in its state prisons beginning the second week of January after contractors Aramark Correctional Services and Trinity Food Services terminated their contracts due to escalating food costs. The department will have to cope with a growing inmate population combined with a steep cut in the state's food appropriation, from $85.75 million to $76.5 million. Trinity pulled out of the prisons it was serving in November and Aramark will be out by Jan. 12.
