Stillings Hall at the University of New Hampshire honored soccer’s World Cup 2014, which was held this month in Brazil, by featuring a dish at a dinner event from each of the 32 nations that participated in the tournament. Some examples include feijoada, the national dish of Brazil, arroz con pollo (Spain), bratwurst (Germany) and chocolate truffles (Switzerland). About half of the items served were items already on our menu, such as burgers (America) and quesadillas (Mexico). For the other items, it was a great way for our culinary staff to explore different cuisines and to introduce their own cultures and experiences to students and faculty, like the dish Akara from Nigeria, which a staff member had enjoyed when on military duty in the country. The reaction was very positive, and we had a lot of non-traditional students, staff and different clientele than we normally serve within this residential area of campus.
