Yield: 50, 4-oz. servings

11 lbs. 4 oz. Allens Baked Beans
2 1⁄2 qts. fruit cocktail, drained
1 qt. mango chutney, chopped
1 qt. mandarin oranges, drained
1 1⁄2 cups cider vinegar
1 1⁄2 Tbsps. allspice, ground
1 Tbsp. crushed red pepper
1 qt. almonds, slivered
1 qt. coconut, toasted

  1. Combine baked beans with next six in-gredients in large metal bowl. Mix well.

  2. Transfer mixture to 2-inch deep full pan or half-size hotel pan(s) prepped with non-stick spray.

  3. Bake in 375°F conventional oven (325°F convection) for about 45 minutes.

  4. Sprinkle almonds and coconut over the top. Bake 15 minutes more.

*Each #10 can of Allens Baked Beans yields approximately 7 lbs. 3 oz.
