From: Chef Angel Alvarez, Tortas Jalisco, Lawrence, KS. Yield: 1 serving. (Quantities are approximate and may be adjusted to taste.)
1 telera or bollillo bun, approximately 5" long
2 Tbsp. mayonnaise
2 Tbsp. refried black or pinto beans
as needed, leaf lettuce
2 thin slices AÒejo Enchilado cheese, divided
2 thin slices Queso Asadero, divided
2 thin slices Queso Quesadilla, divided
1 Tbsp. guacamole
2 tomato slices
Split bun in half. Grill each half lightly. Spread each half with 1 Tbsp. mayonnaise. Spread refried beans on bottom half. Top with 1 slice each cheese, guacamole, tomato, then second slice of each cheese. Place top half of bun on top; serve.
