Yield: 8 servings
8 oz. baby spinach
6 oz. lettuce, spring mix
11/2 fl. oz. vinaigrette dressing
8 ea. (24 oz. total) Maple Leaf Farms Duck, Tea Smoked, see recipe below
2 ea. apples, Granny Smith, caramelized
4 oz. honey glazed walnuts
4 oz. cherries, sun-dried Caramelized apple crisps, for garnish
To assemble: Toss the spinach and mixed greens with vinaigrette. Arrange greens attractively on plate (or platters for buffet service).
Thinly slice and fan duck. Place duck on salad plate at 3 o'clock position.
Fan caramelized apples on top of greens.
Sprinkle dried cranberries and walnuts attractively on top for garnish.
