Few foods have the dimension of a bowl of soup. Louis P. DeGouy, chef at the Waldorf-Astoria for 30 years and author of The Soup Book in 1949, said, “Soup is the song of the hearth.” But there are all kinds of ideas about how to make it sing, including this advice from composer Ludwig van Beethoven: “Anyone who tells a lie has not a pure heart, and cannot make a good soup.” The following recipes will get you off to a good start as we enter soup season.
