Salmon is a favorite fish for Americans. Your customers know it and love it. But for serious salmon style, it’s a good idea to change course when considering how the rich, substantial fish can be prepared. Enter salmon en papillote, salmon poke, salmon cakes and smoked salmon dip. These crowd-pleasing seafood ideas came up in recent collaborations between the foodservice teams at two colleges—one in Pennsylvania and one in North Dakota—and the Alaska Seafood Marketing Institute and the Healthier Campus Initiative, part of Partnership for a Healthier America.
