Steamed Scallops with Tamari and Ginger

YIELD: 24 servings

6 lbs. sea scallops
1/4 cup fresh ginger, finely-chopped
1 cup tamari soy sauce
2 Tbsps. Asian sesame oil
1 1/2 cups green onions, julienned, white and light green parts
1/4 cup toasted sesame seeds
72 sprigs cilantro

  1. PER SERVING TO ORDER: Cut 4 oz. sea scallops in half horizontally. Arrange in one layer on plate. Sprinkle with 1/2 tsp. ginger; drizzle with 2 tsps. tamari soy sauce and 1/4 tsp. sesame oil. Scatter 1 Tbsp. green onions on top.

  2. Place plate on steamer over boiling water. Cover and steam 5 minutes or until scallops are opaque.

  3. Remove plate from steamer; sprinkle with 1/2 tsp. sesame seeds and garnish with 3 cilantro sprigs.
