INGREDIENTS:4 ½ lbs. Tyson® Bigtime Popcorn Chicken Bites®, frozen

Thai Lemon Grass Dipping Sauce:
1¼ cup teriyaki glaze, commercially prepared
1 cup soy sauce
¼ cup sugar
2 Tbsp. lemongrass, fresh, minced
1 Tbsp. ginger root, fresh, peeled, grated
1 Tbsp. sesame oil
1 Tbsp. rice vinegar

Apricot-Chile Sauce:
1 ½ cup Asian sweet chile sauce, commercially prepared
3/4 cup apricot preserves

36 bamboo skewers
72 bibb lettuce leaves, fresh, trimmed
for garnish, 24 lime wedges
for garnish, 12 sprigs of basil DIRECTIONS:Deep-fry chicken at 350°F for 6-8 minutes or until chicken is no longer pink. Remove from fryer and drain. Keep warm above 140°F.

For Thai Lemon Grass Dipping Sauce: Combine ingredients in saucepan and whisk to blend. Heat over medium-low heat for 2-3 minutes. Cover and reserve.

For Apricot-Chile Sauce: Combine in saucepan and whisk to blend. Heat over medium-low heat for 2-3 minutes. Cover and reserve.

To assemble single serving: Thread 2 pieces chicken each on 3 skewers and arrange on plate with 6 lettuce leaves. Portion 3 Tbsp. each lemon grass sauce and chile sauce into individual containers and place on plate. Garnish plate with 2 lime wedges and a sprig of basil.
