YIELD: 24 servings

8 cups prepared, instant mashed potatoes
7 cups canned salmon, drained, skin and bones removed
1/4 cup dried parsley
1 tsp. salt
Oven spray, as needed
24 leaves lettuce
24 ea. hamburger buns
24 slices tomato

  1. In a large bowl, mix together potatoes, salmon, parsley and salt.

  2. Lightly spray sheet pan with oven spray. Form 1/2-cup portions of salmon mixture into burger-size patties; place on sheet pan.

  3. Bake in 425°F oven 20 to 25 minutes, turning salmon burgers with spatula after 10 minutes.

  4. Place 2 lettuce leaves on bottom of each hamburger bun, top with 1 salmon burger and 1 tomato slice; close bun and serve.
