INGREDIENTS:2 lbs. fresh beets
1 Tbsp. olive oil
4 Tbsps. Boyajian Vanilla Vinegar
2 tsps. fresh mint
Salt & pepper to tasteDIRECTIONS:1. Preheat oven to 400°F. Remove leafy tops from the beets. Scrub the beets (do not remove the skin) and slice into ¼-inch thickness.

2. In a large bowl, toss together the beets, olive oil, salt and pepper. In a single layer; place beets on a sheet pan and roast for 15-20 minutes, turning once halfway through roasting time.

3. Add vanilla vinegar and mint to the beets and gently toss. Serve warm, at room temperature, or chilled.
