Gary Spezia was crowned “risotto royalty” in Uncle Ben's contest earlier this year for his “Italian Risotto La Barca Con Polo” recipe. Spezia, Eurest food service director at Covidien Plant in St. Louis, made his risotto sing with notes of basil, oregano and garlic, plus Parmesan cheese, mushrooms and boneless chicken breasts.
