INGREDIENTS:1 cup milk
1 cup cooked rice, cooled
2 eggs, separated
1 Tbsp. melted butter or margarine
½ tsp. vanilla
½ tsp. salt
½ tsp. cinnamon
1 cup less 2 Tbsp. all-purpose flour
1/3 cup California Raisins
Orange Marmalade Sauce (recipe follows)DIRECTIONS:In large bowl, mix milk, rice, egg yolks, butter, vanilla, salt and cinnamon to blend thoroughly. Sprinkle flour over rice mixture; mix to blend thoroughly. In another bowl, beat egg whites to form stiff peaks. Fold into rice mixture. Gently mix in raisins. On a hot, greased griddle or skillet over medium heat, bake ¼ cupfuls of mixture until browned, turning once. Grease griddle and repeat as necessary. Serve hot with Orange Marmalade Sauce.

For orange marmalade sauce: In small saucepan over low heat, stir ½ cup orange marmalade until melted. Add ¼ cup butter or margarine and ½ cup orange juice. Stir until butter is melted. Serve slightly warm. Makes about 1 cup. SERVINGS:12 griddle cakesFrom:Grant Corner Inn, Santa Fe, New Mexico
