Canisius College has been in on the plant-based trend for some time now, thanks in part to an ongoing collaboration with the Humane Society of the U.S. (HSUS). In fact, a former Canisius staff member, Jennifer DiFrancesco, is now a culinary specialist/trainer with the HSUS.
