Grower Rick Pedersen poses with the orange cauliflower he harvested on his farm in Seneca Castle, NY.

Hold on to your apron strings, orange cauliflower is here. Originally discovered in Canada, the cauliflower hybrid is now being developed at Cornell University's New York State Agricultural Station in Geneva.

The brightly hued veggie is expected to be a culinary hit: not only is it attractive to look at, but it has a higher nutrient content than the white variety (25% more Vitamin A). It also keeps its color after cooking, says researchers, and has good growing characteristics, even in poor conditions.
