Mango whole-wheat brownies

YIELD: 16 brownies

 

2 oz. unsweetened chocolate

½ cup whole-wheat flour

½ tsp. cinnamon

½ tsp. salt

½ cup olive oil

½ tsp. vanilla extract

1/4 tsp. almond extract

1 cup light brown sugar

2 large eggs

1 cup chopped walnuts

2 ripe mangos, peeled, pitted and diced (divided)

 

1. Over double boiler, melt chocolate then set aside to cool. Whisk flour, cinnamon and salt together; set aside. Whisk in olive oil, vanilla and almond extracts. Add sugar to oil mixture, then add eggs one at a time. Stir in cooled chocolate. Using spatula, fold in flour mixture until just incorporated. Stir in walnuts and half of the mangos.

2. Preheat oven to 350°F. Grease and flour 8”x8” pan. Pour batter evenly into prepared pan. Sprinkle remaining mango evenly over top of batter. Bake 40 minutes, until toothpick inserted into center comes out clean. Cool completely before cutting.
