INGREDIENTS:1 box (9 oz.) Uncle Ben’s Brand Mexican Fiesta Rice
3 lbs. medium shrimp, peeled, deveined
1 ½ cups lime juice
¼ cup garlic, finely chopped
1 ½ cups red onion, medium dice
3 cups cooked black beans, drained
3 cups tomatoes, medium dice
36 lime slices, for garnishDIRECTIONS:1. Cook rice according to package directions. Hold warm.

2. Marinate shrimp in lime juice and garlic for 1 hour. Drain shrimp, discarding marinade.

3. Sauté onions until slightly softened. Add shrimp, beans and tomatoes. Sauté until shrimp are cooked through.

4. For Each Serving: Place 1 cup of rice on a serving plate. Top with 1 cup of the shrimp and bean mixture. Garnish with lime slices.
