How to steam without a steamer
Operators don't want to be caught without steaming capibilities, but if the kitchen's steamer is on the fritz, it's time to break out the tilt skillet.

With steam and sous vide cooking en vogue, operators don’t want to be caught without steaming capabilities. But if the kitchen’s combi oven or steamer is on the fritz, it’s time to break out the tilt skillet, says Debera Tredennick, director of Child Nutrition Programs at Frisco Independent School District in Frisco, Texas. Add 6 inches of water to the skillet, then place an upside-down 4-inch pan on top. Set your items in another pan atop the 4-inch pan, and close the tilt skillet lid. “The steam will build up, and you have a steamer,” she says.
