Hmong Beef Fried Rice

YIELD: 7 1-cup servings

1 lb. ground beef
2 Tbsps. garlic powder
1 tsp. sugar
1/2 tsp. salt
4 cups rice, cooked
2 eggs
as needed toppings: cilantro sprigs, peas, chopped scallions

1. Thoroughly cook ground beef. Drain excess fat.
2. Add garlic powder, sugar and salt to beef, mix well, then add beef mixture to cooked rice. Heat beef and rice mixture to 165°F.
3. Beat eggs and cook until done (similar to scrambled eggs). Finely chop or shred eggs and add them to beef/rice mixture. Mix well.
4. Serve in one-cup portions with cilantro, peas and scallions either added to the mixture or offered as optional toppings or garnish.
