Guest Chef Brings Taste of Brazil

Guest chef exchange allows students at UMass-Boston to experience dishes from a major South American culture.

In Massachusetts, feijoada servida com arroz, couve, laranja e farinha, galinhada, and escondidinho de bacalhau were on the menu for students at UMass Boston this month when the campus welcomed Sodexo Brazilian chef Maira Eduardo as part of the 2013 Global Chef Program.
The Global Chef Program is a month-long international chef residency that provides opportunities for the company’s top chefs worldwide to travel to different countries and share authentic cuisine with local teams, students, faculty and staff.

Eduardo prepared classic dishes from Brazil and other South American countries and provided active demonstrations of meal preparation that involved student interaction with her and experience firsthand the cultural and educational benefits of her visit to campus.

After a weekend-long training, UMass Boston Executive Chef Ernie Quinones and his team executed Eduardo’s menu using both local ingredients and specialty ingredients imported from Brazil to ensure authenticity of the menu.

“Many of the Brazilian students at UMass were amazed at how accurate and authentic the flavors were,” says Michael Reilly, Sodexo General Manager at UMass Boston.
