Ginger-rubbed salmon with maple-soy glaze

YIELD: 4 servings

4 salmon filets, skinned and boned, 6-oz. each
For marinade:
1 Tbsp. minced garlic
1 Tbsp. minced ginger
¾ cup orange juice
¼ cup soy sauce

For sauce:
2 Tbsps. pure maple syrup
1 Tbsp. cornstarch combined with 1 Tbsp. water

1.    Combine marinade ingredients in bowl. Remove half of marinade and set aside. Marinate salmon for at least 30 minutes, up to 24 hours. 
2.    Add syrup to reserved marinade. Bring to a boil and stir in cornstarch mixture, adding enough until just thickened.
3.    Broil salmon 4 inches from heat for 5 minutes. Turn and broil 3-5 minutes longer or until fish flakes easily with fork. To serve, spoon warm sauce over salmon.
