Fried Banana Dumplings

as needed, wonton wrappers
as needed, bananas sliced thin
pinch of cardamom
as needed, water
as needed, praline sauce (recipe follows)
as needed, plantains, cut in half and fried
one scoop of vanilla ice cream

Put 3 sliced bananas in each wonton wrapper and sprinkle with a very small pinch of cardamom. Brush with water and seal. Cut with metal cutter into crescents. Fry dumplings 3 per order. Serve with sauce and garnish with 1 plantain chip per order.

PRALINE SAUCE (YIELDS 1 QUART):
1 1/2 cups brown sugar, packed firm
3/4 cups light corn syrup
2 oz. butter
5 oz. cream
1 cup pecans, toasted

In a saucepot, combine sugar, corn syrup and butter to melt. Add cream and bring to a simmer. Add pecans and cool.
