YIELD: 12 servings
3 cups flour
2 Tbsps. salt
2 Tbsps. sugar
2 Tbsps. brown sugar
2 Tbsps. chili powder
2 Tbsps. cumin, ground
2 Tbsps. black pepper, ground
4 Tbsps. paprika
1 lb. yellow or red onions, sliced as needed hot oil
1. Thoroughly mix all dry ingredients together to make the seasoned flour.
2. Separate onion slices into rings. Toss onion rings in seasoned flour. Deep fry in 365°F oil until crispy and dark brown.
3. Drain well and serve.
