Yield: 24 servings

4 Tbsps.butter
8 cups red and orange bell peppers,diced
8 cups mushrooms, sliced
8 cups Alfredo sauce, commercially prepared
2 Tbsps.hot pepper sauce
2 Tbsps.Old Bay seasoning
16 cups New England style infused rice pilaf, cooked ,hot
8 cups sharp cheddar cheese,shredded
6 cups crabmeat chunks
1 /2 cup green onions,minced
4 Tbsps.parsley, minced

  1. Heat butter in large skillet over medium-high heat. Add bell peppers and mushrooms; saute until mushrooms are golden.

  2. Combine Alfredo sauce, hot pepper sauce and Old Bay seasoning; whisk to blend.

  3. Combine vegetables, sauce, rice and cheese; stir to blend. Gently fold in crabmeat, onions and parsley.

  4. Portion rice mixture into 24 individual-size baking dishes. Cover and chill to hold. Per portion: bake in preheated oven at 400°F for 10 minutes or until hot and bubbly.
