Chocolate Chunk Cake Mix Cookies

YIELD: 24 cookies

1lb., 4 oz. margarine
5 lbs. yellow cake mix
4 eggs
4 oz. water
2 lbs. chocolate chunks

  1. Cream margarine in mixing bowl on low speed. Add cake mix. Mix on low speed for 3-5 minutes.

  2. Add the eggs and water and mix for an additional 2 minutes. Scrape the cookie mixture in the bowl and add the chocolate chunks. Mix for one minute more.

  3. Scoop the cookie mixture using a #24 scoop. Lay out 4 X 6 onto a parchment lined sheet pan.

  4. Bake in preheated 325°F convection oven for 10-12 minutes or until top is a light golden brown. Remove from oven and cool completely.
