YIELD: 4 3/4 cups

1 cup paprika
1 cup ground cumin
1/2 cup onion powder
1/2 cup garlic powder
1/2 cup black pepper
1/2 cup kosher salt
1/2 cup cayenne pepper
1/4 cup thyme
20 lbs. beef chuck flats or pork shoulder

  1. Combine rub ingredients and rub into beef chuck flats or pork shoulder cushion. Refigerate 24 hours.

  2. Preheat oven to 300°F. Slow roast meat, covered for 3-4 hours until fork tender.
