YIELD: 4 3/4 cups
1 cup paprika
1 cup ground cumin
1/2 cup onion powder
1/2 cup garlic powder
1/2 cup black pepper
1/2 cup kosher salt
1/2 cup cayenne pepper
1/4 cup thyme
20 lbs. beef chuck flats or pork shoulder
Combine rub ingredients and rub into beef chuck flats or pork shoulder cushion. Refigerate 24 hours.
Preheat oven to 300°F. Slow roast meat, covered for 3-4 hours until fork tender.
