Avocado, Blue Cheese and Bacon Pizza

YIELD: 1 pizza

1 unbaked pizza dough shell, 9-inch
1 Tbsp. olive oil
3/4 Cup mozzarella cheese, shredded
1 roma tomato, cut in
1/8-inch slices
4 oz. California avocado, diced
1/4 cup crisply cooked bacon, chopped
1 Tbsp. red onion, diced
2 Tbsps. mozzarella cheese, shredded
2 Tbsps. blue cheese, crumbled
2 Tbsps. fresh spinach leaves, thinly julienned - for garnish

  1. Brush pizza dough shell with olive oil.Top with ingredients in order listed, through blue cheese.

  2. Bake at 500°F until crust is golden and cheese at center is bubbly hot.

  3. Scatter spinach over top.

  4. Cut into 8 slices.
