CHEF JOE LANDA of the Jewish Theological Seminary in New York, Flik Independent School Dining (FISD), created a highly unusual blueberry recipe that caught the judges' attention: Jerky with no beef, but blueberries instead. Five-Alarm Smokey Blueberry-Pistachio Jerky's smokehouse flavors come from soy bacon and cayenne. It's slowly oven dried, and also includes pistachios, pumpkin seeds and applesauce.

The U.S. Highbush Blueberry Council challenged the chefs of FISD to create blueberry recipes for breakfast and lunch entrees and healthy snacks.
