Buffalo chicken wrap
University of Maine
Taking chicken strips in a different direction, this wrap (pictured above) has been a proven winner at Maine, available all week at the Bear’s Den in the Memorial Union and rotating on the menu at other locations. Students can choose a wheat or white tortilla, which gets stuffed with spicy Buffalo chicken, lettuce, tomato, cheese and finally the eternal question regarding Buffalo wing condiments: ranch or bleu cheese?

Breakfast burrito bowls
Loudoun County (Va.) Public Schools
These tempting bowls (above) debuted during National School Breakfast Week in the spring, and according to Stefanie Dove, marking and community outreach coordinator, they are a big hit with the kids and super easy to make. The bowls consist of whole-grain tortillas, potatoes, scrambled eggs and cheese. Students can then customize their breakfast at self-serve garden bars.

General Tso’s chicken wrap
University of Richmond
The “wrap stars” at the always-popular Tyler’s location at Richmond have come up with a lot of handheld creations, such as the veggie-centric harvest wrap (with mixed greens, red pepper hummus, cucumbers, carrots and avocado) and this cool mash-up of a classic Chinese-American dish: General Tso’s chicken. Crispy chicken tenders in sweet Tso’s sauce are wrapped up with jasmine rice and matchstick carrots.
