New research shows that 66 percent of consumers are hungry for more New Orleans ingredients and flavors on restaurant menus or in retail, according to Datassential’s recent Dine Around report. “Operators can learn plenty” from the melting pot of culinary culture that is New Orleans, the report points out, “from a variety of different cuisines (Cajun, Creole, Vietnamese, classic French, Southern American) to a plethora of classic dishes and ingredients (crawfish, gumbo, andouille).” Check out a few dishes that show off Centerplate Chef Lenny Martinen’s interpretations of the local zeitgeist, all found at the Mercedes-Benz Superdome, the Smoothie King Center and Champions Square.
